Menù Gourmet – My interpretation of accalá mantecato

  • Parsley cream mussels soutèe perfumed with silver hendrick’s gin and crispy bread
  • Green tagliatelle paglia e fieno, guanciale and smoked home made ricotta
  • Beef fillet cooked at low temperature wrapped in smoked goose breast, roasted carrots, tropea onion stewed with sangiovese
  • Trebbiano pear, caramel, dry spices and vanilla chocolate cream
